Ingredients
One box of falafel mix ( I used Near East)
1/3 cup ground sunflower kernels (use food processor)
1 red pepper sliced
1 green pepper sliced
1 small - medium onion sliced
1 ripe avocado peeled, pitted and chopped into chunks
1/3-1/2 cup cooking oil
1 tbsp cooking oil
3 tbsp water
1 tbsp lime juice
1/4 tsp cumin
1/4 tsp cilantro 2x
tortillas
salt and pepper to taste
salsa ~ optional
Follow the directions to the falafel mix adding the sunflower kernels and 1/4 tsp cilantro to the mixture. Make into patties as directed and place aside.
Sautee the peppers and onions with 1 tbsp oil until tender. While sautéing, take the avocado, 1/4 tsp cilantro, cumin, lime juice and water and place in food processor. Blend until creamy smooth.
Heat oil in pan and cook falafel patties for 4 minutes on each side until golden brown and crispy. Heat tortillas according to package.
Spread 2-3 tbsp avocado mixture on tortilla, add the falafel followed by the onions and peppers, salt & pepper to taste and add salsa if desired.
Makes four servings.

They look tasty, but so does Vegan jerky made from prickly pear cactus. There is a reason I don't see people chewing the cactus around here besides the thorns :-P
Wait..... Lime juice and salsa..... sold
my salt accidentally poured all over them, i ment to sprinkle and it was the end of the contain and you can see all the salt grains on my food :( still tasted good!
You can fix any mistake with cilantro.
I love cilantro in my guac. :P
