Whatever floats your boat...

Thought I would share with you my recipe for Veggie Burgers

1 cup lentils

2 cups water, bring to boil, reduce heat and cover til fully cooked and water is gone.

1/3 cup brown rice

1/3 cup red quinoa  ( if you don't wanna use the quinoa, just sub with more rice)

1 cup water

bring rice and quinoa to a boil, cover and reduce heat until fully cooked and water is gone.

1 cup walnuts

1/2 cup sunflower kernels

chop in food processor

1 cup mushrooms

chop in food processor

1 tbsp minced garlic

1 tbsp olive oil, sauté the garlic and mushrooms in the oil,  add the nut mixture, and lightly pan fry for a few minutes, and set aside in big mixing bowl

1 tsp cumin

1 tsp smoked paprika

1 tbsp cilantro

1/4 cup tamari sauce, if you don't have use soy ... add all seasonings, sauce into the mixing bowl with the nut mushroom mixture.

1/2 cup bread crumbs

salt pepper to taste

Once lentils and rice/quinoa is cooked, add to the nut mixture.  Mix well, and gradually add the bread crumbs until the mixture has a decent consistency.

Form into 8 patties, about 3/4 cup mixture for each.

Heat 1 tbsp oil in pan and fry patties on medium about 8 minutes each side or until golden brown.

Enjoy!  :)

Let me know if you like them, I love them, I ate three yesterday and put the rest in the freezer, about to go home and heat one up for lunch!  Red lentils would be better for presentation.   The smoked paprika gives it a good bite, you can always sub some liquid smoke if you want in place of the tamari... or even some worcestershire.
